The Story of Biltong

Biltong has its roots in Southern Africa, where the need to preserve meat for long journeys and harsh conditions shaped one of the region’s most iconic foods.
Long before modern refrigeration, early Dutch settlers in Southern Africa developed practical methods for preserving meat so it could be stored, carried, and enjoyed over extended periods of time. Fresh cuts of meat were seasoned with salt and vinegar, then combined with spices such as coriander and black pepper. The meat was then carefully air-dried, allowing it to cure naturally while developing its rich, savoury flavour and distinctive texture. This process formed the foundation of what we now know as biltong.
The name itself reflects its origins, coming from Dutch/Afrikaans: bil meaning rump and tong meaning strip — literally “strips of meat.”

Built for the Journey

In the 1800s, during the Great Trek, Boer pioneers (Voortrekkers) travelled deep into the South African interior in search of new land and opportunity. Life on the move demanded food that was lightweight, durable, and able to withstand weeks without spoiling. Biltong quickly became an essential part of daily life, valued by farmers, hunters, and travellers alike for its practicality and nourishment.
Its role as a trusted travel food continued into times of conflict. During the Second Boer War, commandos relied heavily on biltong to sustain them on the open veld, where supplies were limited and conditions were harsh. Later, in the First World War, South African soldiers serving on the Western Front were even sent biltong from home — a taste of familiarity carried across continents.

What began as a simple preservation method evolved into a cherished culinary tradition, passed down through generations. The techniques remain much the same today: quality cuts of meat, carefully balanced seasoning, and slow air-drying to develop flavour naturally
